Ingredients:

  • 1 1/2 cups whole wheat flour
  • 1 cup oats
  • 1 tsp cinnamon
  • 1/2 tsp baking powder
  • 3/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup brown sugar
  • 2 tbsp canola oil
  • 1/2 cup skim milk
  • 1 large egg

Directions:

  1. Preheat oven to 350 degrees.
  2. Combine flour, oats, cinnamon, baking soda, baking powder salt and sugar in a large mixing bowl.
  3. Add oil, buttermilk, egg and vanilla, then fold in mashed banana.
  4. Empty batter in to an 8 1/2 inch x 4 1/2 inch loaf tin sprayed with nonstick cooking spray and bake for 50 minutes to an 1 hour.
