Ingredients:

  • 1 1/2 cups sugar
  • 2 large eggs
  • 2 1/4 cups flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 cup mashed overripe banana
  • 1/4 cup buttermilk
  • 1 cup miniature semisweet chocolate chips

Directions:

  1. Preheat oven to 350F degrees.
  2. Cream Sugar and butter.
  3. Add eggs, beating until light.
  4. In separate bowl, combine flour, baking powder, and baking soda.
  5. Add to butter mixture, beating well.
  6. Combine banana, vanilla, and buttermilk.
  7. Stir into flour mixture.
  8. Stir in mini-morsels.
  9. Pour batter into a greased loaf pan and bake for 1 hour.
  10. (Can also be made in mini-loaf pans or muffin tins, test for doneness after 40 or 30 minutes, respectively).
