Baking Mix Salsa Chicken Melt

Ingredients:

Directions:

  1. Preheat oven to 400*.
  2. Stir together baking mix, water, and egg.
  3. Spray 8 X 8 pan with vegetable cooking spray.
  4. Place batter in bottom of pan.
  5. Sprinkle 1 1/4 cups of cheddar over batter.
  6. Combine cooked chicken and salsa and heat through.
  7. Spoon chicken mixture over batter in pan to within 1/2 of edges.
  8. Bake 20-25 minutes or until edges are golden brown.
  9. Sprinkle with remaining cheese and bake 1 to 3 minutes longer or until cheese melts.
  10. Loosen from sides of pan.
