Baked Tilapia with Mandarin Oranges & Cashews

Ingredients:

Directions:

  1. Preheat oven to 425 degrees F (225 degrees C).
  2. Arrange snapper fillets in a single layer in the bottom of a baking dish sprayed with cooking oil (preferably olive oil spray).
  3. In a medium bowl, stir together orange juice through sesame oil. The mix in the red pepper flakes, ginger, and chopped oranges. Pour over the snapper in the dish.
  4. Bake uncovered for 12 to 15 minutes until fish is opaque. Transfer fillets to serving plates and sppon sauce over them. Garnish with a sprinkle of cashews and scallion slices.
