Baked Tilapia with Mandarin Oranges & Cashews |

You could substitute snapper. I use tangerines for this dish, but if not available, you can use canned mandarin oranges and orange juice. Ingredients:
16 ounce red snapper fillets |
2 cups tangerines, juiced |
2 tbsp fresh lime juice |
1 tbsp brown sugar |
2 tbsp lite soy sauce |
1 tsp sesame oil |
1 pinch crushed red pepper flakes |
2 tsp fresh ginger root, finely chopped |
2 cups tangerines, peeled and chopped |
1/3 cup unsalted cashews, roughly chopped |
2 scallions, finely chopped |
Directions:
1. Preheat oven to 425 degrees F (225 degrees C). 2. Arrange snapper fillets in a single layer in the bottom of a baking dish sprayed with cooking oil (preferably olive oil spray). 3. In a medium bowl, stir together orange juice through sesame oil. The mix in the red pepper flakes, ginger, and chopped oranges. Pour over the snapper in the dish. 4. Bake uncovered for 12 to 15 minutes until fish is opaque. Transfer fillets to serving plates and sppon sauce over them. Garnish with a sprinkle of cashews and scallion slices. |
