Ingredients:

  • 2 lb of onions - vidalia , other sweet onions, small pearl onions, yellow or white onions, or purple onions - cut into a large, chunky dice
  • 1/2 stick butter, melted
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Directions:

  1. Preheat oven to 350 degrees;
  2. Place the onions in a shallow, buttered 1-quart baking dish;
  3. Combine melted butter, brown sugar, mustard, salt and pepper and pour over the onions;
  4. Bake the onions until they are browned and well heated throughout, about 40 minutes;
  5. Sprinkle with parsley before serving.
