White Tuna Fish Sandwiches

Ingredients:

Directions:

  1. Drain the cans of tuna so that most of the water is removed.
  2. Place tuna in a big bowl.
  3. With a vegetable peeler or knife, peel the top layer off the celery stalk; finely dice.
  4. Add the celery and onion dice to the tuna.
  5. Add the mayonnaise, salt, pepper, and lemon juice.
  6. Mix together the ingredients with gloved or clean hands.
  7. Crush together the mixture with your fingers until well combined, making sure to break up large chunks of tuna.
  8. Toast the bread.
  9. Assemble each sandwich with 2/3 cup tuna salad, 3-4 pieces of lettuce, and 2 slices tomato.
  10. Serve with potato chips and a pickle.
