Ingredients:

  • 1 (7 oz) package precooked chow mein noodles
  • 1/4 cup vegetable oil
  • 2 1/2 cups bean sprouts
  • 1 1/4 cups snow peas
  • 2 1/2 celery ribs
  • 1 1/4 red onions
  • 1/3 cup oyster sauce
  • 1 tsp sesame oil
  • 1/3 tsp pepper

Directions:

  1. Wash all vegetables as needed. Preheat the oven at Bake for 375°F (190°C).
  2. Cut the snow peas in half.
  3. Slice the red peppers in long and thin strips.
  4. Thinly slice the celery stalks, and red onion.
  5. Finely chop the green onions.
  6. In a large pot of boiling salted water, cook noodles just until tender, about 2 minutes.
  7. Drain the noodles and transfer to 13 x 9 inch glass baking dish.
  8. Add 2 tbsp of vegetable oil; toss to coat.
  9. Bake in 375°F (190°C) oven until crisp and slightly golden, stirring once, about 12 minutes.
  10. Meanwhile, in a non-stick skillet, heat remaining vegetable oil over medium heat; stir-fry bean sprouts, snow peas, red pepper, celery and green onion, until the green onion is softened, about 5 minutes.
  11. Whisk together oyster sauce, 2 1/2 tbsp water, soy sauce sesame oil and pepper; add to the bean sprout mixture and bring to boil.
  12. Pour over noodles and toss to coat, Sprinkle with onions.
  13. Serve hot.
