Upside Down Banana Cake

Ingredients:

  • 80 g butter
  • 200 g sugar
  • 1 cup pecan nuts
  • 1 cup raisins
  • 250 g butter
  • 4 litre eggs .
  • 250 ml buttemilk
  • 1 1/2 tsp baking pwd
  • 2 tsp ginger
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg

Directions:

  1. Grease a 26 cm cake pan and line it .
  2. Topping :
  3. Melt the butter .
  4. Add the sugar on top along with lemon juice and boiling water .
  5. Bring to boil , simmer and caramalise until golden brown .
  6. ........
  7. Slice the bananas into thick diagonal pieces .
  8. Add to caramel along with the nuts and raisins .
  9. Cook on high heat for 2 mins until it coat well .
  10. Spoon it into the cake pan .
  11. Set aside .

  13. Pre heat the oven at 180 deg C .

  15. Beat the butter and sugar until creamy .
  16. Add the eggs and beat .
  17. Combine the buttemilk . ( Make sure its well mixed )

  19. In another bowl , add the flour , baking pwd and the spices .
  20. Add to cake batter and mix with hand gently .
  21. Bake for 60 to 70 mins .
  22. .............
  23. Cool and Serve with Cream .
