Ingredients:

Directions:

  1. Heat 1 tablesppon cooking oil in pot over medium heat. Brown and crumble italian sausage. Add onion, red pepper, garlic, carrot and celery and saute until tender (about 5 min). Add tomatoes with liquid, chicken broth and spices and bring to boil; then simmer for about 15 min. Add tortellini and cook for about 5 to 8 min (do not overcook).
  2. Variations:
  3. Add 4 tablespoons of prepared pesto (right before serving) rather than using dried basil and oregano.
  4. To boost nutrition and or color: Add 1/2 cup frozen peas, 1 snall chopped zucchini or 1 cup fresh baby spinach (right before serving).
  5. Best thing about this soup is you can add what YOU like and leave out what you don't!
