Tomato Pasta Side Dish

Ingredients:

  • 1 medium tomato, chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/2 tsp cajun seasoning
  • 1/4 tsp salt
  • 1/4 tsp pepper

Directions:

  1. Cook pasta according to package directions. Meanwhile, in a small bowl, combine the tomato, oil, lemon juice, Cajun seasoning, salt and pepper. Drain pasta; transfer to a serving bowl. Add tomato mixture; toss to coat. Yield: 5 servings.
