Tomato Dressing

Ingredients:

  • 1 large tomato
  • 2 tbsp olive oil
  • 1 garlic clove
  • 1 tsp sugar
  • 1 tsp salt
  • 1 tsp thyme (or 1 fresh sprig)

Directions:

  1. Mix all but tomatoes together. Pour over and let sit at room temperature for 1 hour. Refrigerate up to 8 hours. Serve over salad or sliced cucumbers.
