Tofu Cheesecake Filling

Ingredients:

  • 28 oz soft tofu (2 containers)
  • 1/4 cup. oil
  • 1 egg
  • 1/2 cup. lime juice
  • 1/2 cup. sugar
  • 2 tsp. vanilla
  • 1/2 tsp. cornstarch

Directions:

  1. 1. Blend ingredients in blender. Work slowly, tofu gets heavy.
  2. 2. pour into graham cracker crust and bake at 350 for 30-40 minutes
