Ingredients:

  • 1 1/2 cups black eyed peas- soak in water over night, and then clean
  • 1 tsp paprika
  • salt and pepper to taste
  • i don'tsp remember using that much garlic or paprika so use caution and suit your tastes. i also used chicken stock for a more flavorful background don'tsp over power the main flavors with the stock.

Directions:

  1. Cook until tender
  2. Add 1 can of diced tomatoes with chilies
  3. Diced onion
  4. 2 tablespoons apple cider vinegar
  5. Half cup frozen corn- thawed
  6. I have used diced bell peppers, fresh jalapenos and diced onion.
