Directions:

  1. Combine orange juice concentrate, water, lime juice, rum, mustard and salt; mix until blended.
  2. In large bowl, combine potatoes, apple, celery and currants.
  3. Add orange juice mixture to potato mixture; toss to coat.
  4. Cover; refrigerate for several hours or overnight.
