Ingredients:

  • 2 cups vinegar
  • 1 cup sugar
  • 3/4 tsp salt

Directions:

  1. Cut beets into 1/4-inch-thick slices; set aside.
  2. Combine vinegar, sugar, and salt in a saucepan; bring to a boil. Add beets and cover. Reduce heat; simmer 10 minutes. Remove from heat; cover and chill.
