Stuffed Green Bell Peppers With Sausage

Ingredients:

  • 3 large green peppers
  • 0.5 (12 oz) bottle beer (we use home brewed )
  • 1/2 cup chopped onion
  • 1/2 cup water
  • 1/3 cup minute rice
  • 1 (8 oz) can tomato sauce
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano

Directions:

  1. Slice the peppers lengthwise and remove stems, seeds, and membranes. Place in boiling water for 3 minutes (makes for a bit firmer texture at end of baking time - if you want mushier peppers, leave in longer). Place peppers in a baking pan & lightly salt the inside.
  2. Cook onions & sausage until meat is browned & onions are tender. Add rest of ingredients except the cheese. Bring to a boil, cover and let simmer 20 minutes or until the rice is tender. Stir in 1/2 of the cheese. Fill pepper shells with mixture. Bake at 375 degrees for about 20 minutes. Add the rest of the cheese on top and let stand 3 minutes.
