Stuffed Green Bell Peppers With Sausage |

The Italian sausage and beer make the peppers very tasty, but probably not terribly healthy. Ingredients:
3 large green peppers |
1 lb italian sausage |
0.5 (12 ounce) bottle beer (we use home brewed beer) |
1/2 cup chopped onion |
1/2 cup water |
1 cup shredded cheese |
1/3 cup minute rice |
1 (8 ounce) can tomato sauce |
1 tablespoon worcestershire sauce |
1/2 teaspoon dried basil |
1/2 teaspoon dried oregano |
Directions:
1. Slice the peppers lengthwise and remove stems, seeds, and membranes. Place in boiling water for 3 minutes (makes for a bit firmer texture at end of baking time - if you want mushier peppers, leave in longer). Place peppers in a baking pan & lightly salt the inside. 2. Cook onions & sausage until meat is browned & onions are tender. Add rest of ingredients except the cheese. Bring to a boil, cover and let simmer 20 minutes or until the rice is tender. Stir in 1/2 of the cheese. Fill pepper shells with mixture. Bake at 375 degrees for about 20 minutes. Add the rest of the cheese on top and let stand 3 minutes. |
