Ingredients:

Directions:

  1. Peel the potatoes. Place in boiling water and cook until soft, about 25-30 minutes.
  2. Drain the potatoes, reserving about 1/2 cup of liquid.
  3. Mash the potatoes with reserved liquid. Add butter, milk, salt, pepper, dill and mash/mix well.
  4. While the potatoes are cooking, make the kielbasa mixture. Sautee the onion in about 2 tbsp. of oil on medium heat, until translucent and lightly browned. Add shredded cabbage and cook until cabbage is soft, reduced in bulk and lightly caramelized. Add more oil or some water during cooking if needed.
  5. Add kielbasa slices and cook and stir another 5 minutes.
  6. Stir in the spinach and cook until heated through.
  7. Add kielbasa mixture to the mashed potatoes. Mix well. Serve hot.
