Spinach, Caramelized Onion, and Feta Quiche

Ingredients:

Directions:

  1. Heat oil in a large skillet over medium heat.
  2. Add onion, sugar, and salt.
  3. Cook for 30 minutes or until golden brown, stirring occasionally.
  4. Stir in potatoes; cook for 5 minutes or until lightly browned.
  5. Remove from heat.
  6. Preheat oven to 350 degrees.
  7. Unroll dough, separating into strips.
  8. Working on a flat surface, coil one strip of dough around itself in a spiral pattern.
  9. Add second strip of dough to the end of the first strip pinching ends together to seal.
  10. Continue coiling the dough.
  11. Repeat procedure with the remaining dough strips.
  12. Cover and let the dough rest for 10 minutes.
  13. Roll the dough into a 12 inch circle; fit into a 10 inch deep dish pie plate coated with cooking spray.
  14. Spread potato mixture in bottom of prepared crust and top with spinach.
  15. Combine the milk, egg whites, egg yolks, and cheese; pour milk mixture over spinach.
  16. Bake at 350 degrees or until set, shielding crust with foil after 50 minutes.
  17. Let stand 10 minutes before serving.
