Ingredients:

Directions:

  1. In a small saucepan, melt butter over medium heat until melted. Stir in 1 tablespoon flour, stirring constantly until mixture turns light brown.
  2. Add onion to saucepan and cook 2 minutes, stirring often.
  3. Reduce heat. Gradually stir in milk and cook until mixture boils and thickens about 2 minutes. Stir in spinach (make sure it is DRY), salt, pepper, cayenne and garlic.
  4. Remove from heat, stir in breadcrumbs, parmesan and wine. Let cool until it can be handled.
  5. Divide into 4 portions and shape into patties.
  6. Combine essence with remaining flour and coat patties.
  7. Brown on both sides in oil in a medium skillet.
