Spinach And Sun Dried Tomato Fritta

Ingredients:

Directions:

  1. Melt butter in large non-stick skillet over medium heat.
  2. Add potatoes and some salt to skillet.
  3. Cover and cook 10 minutes, stirring occasionally, until potatoes are tender.
  4. Stir in spinach, tomatoes and onions.
  5. Cook, stirring occasionally, just until spinach is wilted.
  6. Reduce to low heat.
  7. In a bowl, beat eggs, milk, marjoram and salt.
  8. Carefully pour over potato mixture.
  9. Cover and cook 6-8 minutes or until top is set.
  10. Sprinkle with cheese.
  11. Cover and cook about 1 more minute or until cheese is melted.
