Spicy Garlic-Roasted Potatoes

Ingredients:

  • 4 tsp canola oil
  • 5 clove garlic minced
  • 1 1/2 lb red potatoes cut into 1 1/2 inch pieces
  • 1/2 tsp salt

Directions:

  1. Preheat oven to 400. Coat roasting pan with cooking spray.
  2. Heat the oil in a large skillet over medium-high heat. Add garlic; cook until golden ( about 30 seconds), stirring constantly. Add cumin and red pepper. Add potatoes and salt; toss well.
  3. Place potato mixture in a roasting pan coated with cooking spray. Bake at 400 for 25 minutes or until tender.
