Spaghetti Squash Casserole

Ingredients:

Directions:

  1. Cut squash in half and remove all seeds and fibers.
  2. Place squash cut side down in a microwave safe dish and microwave for 10-15 minutes or until tender and strands easily separate with a fork. Set aside.
  3. Meanwhile,in a nonstick skillet coated with cooking spray, brown ground turkey.
  4. Add onion, pepper and garlic and saute until tender.
  5. Add cherry tomatoes and seasonings; heat through.
  6. Add spaghetti squash, and transfer to a 2 quart baking dish that has been sprayed with nonstick cooking spray.
  7. Bake, uncovered at 350 degrees for 25 minutes.
  8. Sprinkle with cheese and basil, if desired.
  9. Bake 5 minutes more or until cheese is melted.
