Southwest Breakfast Casserole

Ingredients:

  • 1 bag patato o'brian
  • 1 tlb chili powder
  • 1 tsp salt
  • 1 tsp pepper
  • 1 stick butter
  • 16 eggs

Directions:

  1. Fry Sausage in large pan until crumbled and all pink is gone
  2. Add thawed potatoes, mix well, and cook until tinder
  3. Add seasonings and stir to combine
  4. Pour mixture into large bowl and set aside
  5. Using the same pan, melt butter and add 12 whipped eggs
  6. Cook eggs until soft scrambled
  7. While eggs are cooking, whip remaining 4 eggs and add to the meat misture, stir until well combined
  8. Add cooked eggs to meat mixture and stir until well combined
  9. Add 2 cups of the grated cheddar and mix until well combined
  10. Pour into well greased large deep baking pan, cover with foil and refridgerate up to 48 hours or freeze up to 3 months
  11. Baking Directions:
  12. Preheat oven to 350
  13. Uncover dish and top with remaining 2 cups of cheese.
  14. Re-cover dish and and place in the center of a hot oven
  15. Bake 45 minutes, remove foil and continue baking 15 minutes more
  16. Serve hot with a side of salsa, sliced tomatoes, and sliced alvacado
  17. Note: left overs freeze well for later use.
