Ingredients:

Directions:

  1. Wash beans carefully and remove any debris. Do NOT presoak. Cover beans with water. Water should be about two inches over beans. Simmer and watch water to make sure beans remain covered and water level stays about one inch above beans. Cooking time will be about one hour until beans are tender and beginning to crack. Saute 1 large onion, diced until wilted with diced bacon, ham or sausage. Scoop about 1 1/2 cups cooked beans into onion mixture and mash. Return bean, onion, bacon mixture to bean pot and add small amount of hot water if needed. Add salt to taste and a few dashes of Louisiana Hot Sauce and about 1/2 cup chopped parsley. Continue cooking for about five minutes. Stir frequently to prevent sticking. Serve over hot rice.
