South Louisiana White Beans Rice |

The Creoles ahve their red beans, but South Louisiana has its white beans, which are actually navy beans or peas. It is served over rice and is a filling comfort food. Goes great with a salad. Add a piece of fried chicken or grilled sausage as a side for a complete meal. Ingredients:
1 lb dry navy beans or peas |
1 onion |
6 oz. bacon or 8 oz.ham or sausage |
salt |
louisiana hot sauce |
fresh parsley |
Directions:
1. Wash beans carefully and remove any debris. Do NOT presoak. Cover beans with water. Water should be about two inches over beans. Simmer and watch water to make sure beans remain covered and water level stays about one inch above beans. Cooking time will be about one hour until beans are tender and beginning to crack. Saute 1 large onion, diced until wilted with diced bacon, ham or sausage. Scoop about 1 1/2 cups cooked beans into onion mixture and mash. Return bean, onion, bacon mixture to bean pot and add small amount of hot water if needed. Add salt to taste and a few dashes of Louisiana Hot Sauce and about 1/2 cup chopped parsley. Continue cooking for about five minutes. Stir frequently to prevent sticking. Serve over hot rice. |
