Sour Cream Banana Cake

Ingredients:

  • 1/3 cup canola oil
  • 1 cup sour cream
  • 1/3 cup milk
  • 1 tsp vanilla
  • 2 cups flour
  • 1 1/4 cups sugar
  • 2 tbsp cornstarch
  • 1 1/4 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp nutmeg
  • 1/2 tsp cinnamon

Directions:

  1. Preheat oven to 350°F.
  2. Whisk all the wet ingredients together in a medium bowl until smooth. Set aside.
  3. Whisk dry ingredients together in a large bowl. Spray your bundt pan with cooking spray, or lightly grease.
  4. Mix wet ingredients into the dry, adding a tbs or so of milk if needed. Batter will be thick but not dry. Pour evenly into the bundt pan and bake for 50 minutes or until a toothpick comes out clean. Let cool completely before removing from pan.
  5. Serve with powdered sugar and fresh strawberries.
