Shrimp Stuffed Twice-Baked Potato

Ingredients:

Directions:

  1. Rinse potatoes and prick skin with fork several times.
  2. Place potatoes in microwave and cook on high for 9-10 minutes or until fully cooked.
  3. Preheat oven to 400°F.
  4. Cut each potato in half lengthwise.
  5. Scoop out potato middles into a medium size mixing bowl.
  6. Set potato skin shells on baking sheet.
  7. Sauté shrimp scampi in large skillet over medium heat for 6-7 minutes Shrimp should be almost fully cooked.
  8. Scoop out shrimp with slotted spoon and set aside.
  9. Poor scampi sauce in mixing bowl with potato middles.
  10. Mash scampi sauce together with potato middles.
  11. Add cheese, shrimp and sour cream and stir together.
  12. Add black pepper to taste.
  13. Scoop potato and shrimp mixture in potato skin shells.
  14. Bake filled shells 10-15 minutes until heated thoroughly.
