  1. Preheat oven to 400 degrees.
  2. Drain and rinse chick peas. Pat with a paper towel to dry.
  3. In a bowl, toss chick peas with olive oil. Add spices. Mix to coat.
  4. Spread chick peas on a cookie sheet in a single layer.
  5. Bake 20-40 minutes, until golden brown and crunchy. Be sure to monitor your chick peas periodically throughout the cooking time as they can burn easily and quickly near the end of cooking. Redistribute the chick peas on the pan every few minutes to make sure that they brown evenly on all sides.
  6. Roasted chick peas will keep and remain crunchy when stored in an airtight container or plastic bag for a few days.
