Processing Pimiento Peppers

Ingredients:

  • 3 tbsp salt

Directions:

  1. Purchase ripened red, firm peppers.
  2. Wash, cut in half, remove seeds and membranes and discard.
  3. In a large cooking pot, add about 14 cups of water and bring to boil.
  4. Add prepared peppers and return to boil.
  5. Reduce heat to simmer, cover and cook for about 3 minutes.
  6. Drain well through a colander, return to cooking pot, cover and leave overnight.
  7. The next day, process peppers in a food processor until well chopped and return to cooking pot.
  8. Add salt and mix well.
  9. Cover and let mixture ferment for another day, leave on kitchen counter or stove.
  10. On the third day, stir well, fill plastic containers with mixture to within 1/2 of the top.
  11. Place plastic lid, using a black felt pen, note date and what the contents are.
  12. Place containers in freezer compartment.
  13. Use as required for your recipes.
  14. This recipe can be doubled.
