Ingredients:

  • 2 medium onions, sliced thin
  • 1 quart milk, hot
  • 1 tbsp bacon drippings
  • 1 tsp salt , pepper

Directions:

  1. In a large saucepan add the onions and potatoes.
  2. Cover with boiling, salted water.
  3. Cook until the vegetables are tender.
  4. Drain and reserve the water.
  5. Mash the potatoes; add the bacon drippings and seasoning.
  6. Add hot milk gradually and blend well.
  7. If too thick, you can thin with potato water or hot milk.
  8. Season to taste.
  9. When ready to serve, sprinkle with chopped parsley or paprika.
