Potato Salad W/lemon

Ingredients:

Directions:

  1. Boil potatoes for 20-25 mins until cooked.
  2. Cool and slice.
  3. Place in a large bowl.
  4. Whisk together olive oil, lemon juice, zest, 1 tsp salt and pepper to taste.
  5. Pour over potatoes.
  6. Toss gently, add basil and scallions, toss again. serve warm.
