Ingredients:

Directions:

  1. Preheat oven to 450 degrees Fahrenheit.
  2. Spray a 13x9 pan with cooking spray.
  3. In a large skillet saute chopped onions in 3 tablespoons vegetable oil until golden brown.
  4. Prepare potato pancake mix following directions on box.
  5. Add grated carrots, matzoh meal, and seasonings, then add sauted onions.
  6. Allow batter to sit for 3 minutes to thicken.
  7. Spread in prepared pan.
  8. Bake for 1 hour or until golden brown.
  9. Serve with applesauce or sour cream.
