Lebanese Carrot and Orange Salad

Ingredients:

  • 2 large oranges, peeled and sectioned , then cut into pieces
  • 1/2 cup onion , cut into thin slices
  • 1/3 cup raisins
  • 1 1/2 tbsp vegetable oil
  • 1 1/2 tbsp lemon juice
  • 1 tbsp water

Directions:

  1. In a medium bowl, combine carrots, oranges and raisins.
  2. Toss to combine.
  3. In a small bowl, combine remaining ingredients.
  4. Spoon over carrot mixture. Mix well.
  5. Chill several hours or overnight.
  6. Mix before serving.
  7. Note: preparation time does not include chilling time.
