Potato Croquettes Italian Style

Ingredients:

Directions:

  1. In large bowl, stir together potatoes, parsley, sour cream, paprika, garlic powder, salt, pepper, and cheeses till well blended (do not make them too soft, you want a firmer potatoe mix)
  2. Put flour in one bowl mixed with salt & pepper
  3. Whisk eggs and milk together with about 1 tsp Parmesan cheese
  4. Put breadcrumbs in third bowl.
  5. Heat vegetable oil in medium saucepan (enough to be able to cover croquettes when added to oil - maybe 2 )
  6. Form potatoe mixture into a log about 2 long and 3/4-1 wide
  7. Roll in flour (shake off excess), dip in egg wash then roll in breadcrumbs (pat well and be sure to cover all of potatoe)
  8. When oil is hot (over medium high heat) , place croquette in oil, do not over crowd, I did 4 each batch)
  9. Fry till golden brown all over, maybe 2-3 minutes (turn as needed)
  10. Drain on paper towel.
  11. Great as a side dish or a snack too
