Portuguese Chicken Livers & Rice

Ingredients:

  • 3 tbsp butter or 3 tbsp margarine
  • salt and pepper
  • 4 tbsp olive oil
  • 2/3 cup minced onion
  • 1 1/2 cups long- grain rice
  • 3 cups chicken broth (canned okay)
  • 3/4 cup tomato sauce (canned okay)
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano

Directions:

  1. Heat butter in a skillet and saute livers over medium heat about 3 minutes until brown, but still pink inside.
  2. Remove and season with salt& pepper, chop coarsely and put aside.
  3. Heat the oil on medium heat.
  4. Add onion and garlic and saute until soft.
  5. Add rice, saute until rice just starts to take on a clear color.
  6. Don't scorch the rice.
  7. Add broth and tomato sauce.
  8. Mix well and bring to a boil.
  9. Add all other ingredients, except livers.
  10. Cover& cook over med.
  11. Heat for about 10 minutes.
  12. Stir lightly with a fork, reduce heat, cover and cook for about 10 minutes more until liquid is almost absorbed.
  13. Mix in the livers, stir,cover.
  14. Cover and cook until the liquid is absorbed and the rice is cooked through.
  15. Add more liqid if needed (a little water is okay).
