Ingredients:

Directions:

  1. Mix the base ingredients and press into an 8in square pan.
  2. Bake at 350 until golden brown.
  3. Remove from the oven and allow to cool completely before putting the filling on.
  4. Mix the filling ingredients and using a mixer, beat until stilff. Spread onto the cooled base.
  5. Finally add the crushed pineapple, making sure to drain all the juice. (I use my hands to squeeze out the access... the drier the better)
  6. Cool in fridge.
