Perfect Roast Beef Everytime

Ingredients:

  • cook time includes time left in oven with oven off
  • 2-3 lb. of roast beef any cut (i've used eye round, sirloin , rib roast but it must be 2-3 lbs.)
  • any seasoning you prefer (i salt and liberally pepper)

Directions:

  1. Preheat oven to 500
  2. Oil roast beef and season
  3. Bake for 15 minutes
  4. Shut oven off and do not open door for 1 hour (important)
  5. Take roast out and serve
  6. I know, it sounds too simple but believe me, it comes out a perfect medium, medium rare everytime
