Peppers and Eggs Sandwich

Ingredients:

Directions:

  1. Heat olive oil in large frying pan. Add peppers, saute until almost limp, then add onions. Cook for another 5 minutes or so.
  2. Beat eggs, seasoning to taste with salt and pepper. Add eggs to pan on top of peppers and onions. Once eggs start to set up on the bottom, tip pan and with spatula lift a section at a time to allow uncooked egg to seep underneath cooked part. Do this until top is set but not completely cooked. Turn omelette over and finish cooking.
  3. Cut omelette in pieces and put in Italian rolls (will make 4 sandwiches).
