Pecan-Apple Sweet Potatoes

Ingredients:

  • 7 -8 yams
  • 1 cup sugar
  • 1/2 cup melted butter
  • 2 eggs
  • 1/3 cup milk
  • 1 tsp vanilla
  • 1/2 cup brown sugar
  • 1/4 cup flour

Directions:

  1. Wash and prick potatoes.
  2. Bake at 350 for 1 hour.
  3. Cool. Peel the skin off and discard.
  4. Put the potatoes and the first 4 ingredients into a bowl. Using a mixer, mix until blended. Pour pototoes into one large casserole dish or two medium sized.
  5. Melt 4 T. butter and 1/2 cup brown sugar in a sauce pan.
  6. Add the apples and saute until light brown - 10 minutes.(skip this step if you're only using pecans).
  7. Add the flour and pecans.
  8. Pour on top of the sweet potatoes.
  9. Bake at 350 for 35-40 minutes.
