Ingredients:

Directions:

  1. Make the sugar pecans by melting a teaspoon of butter in a small pan. Add the pecan pieces and heat until hot. Sprinkle with 1 T sugar and 1/8 teaspoon cinnamon. Remove pecans when the sugar melts. Cool.
  2. Diced all the vegetables and fruit about the same size.
  3. Toss the shrimp, vegetables, and fruit with the greens and the raspberry vinegrette.
  4. Top with the bleu cheese and sugared pecan bits.
  5. We like shrimp or chicken if we eat this as a main dish; otherwise, we leave the meat out if it is a side dish.
