  1. For cheese sauce, in a small saucepan, melt the butter over medium heat and stir in the flour.
  2. Cook until smooth and bubbly, about 1 minute.
  3. Gradually add the warm milk and stir until combined.
  4. Stir in the seasonings and cheese.
  5. Constantly stir until cheese is smooth, thick and melted.
  6. Set aside and keep warm to serve with the eggs.
  7. For eggs:.
  8. Using a biscuit cutter, cookie cutter, or mold, cut a nice hole in the center of the bread.
  9. Butter both sides of bread and place in a cast iron saute pan over medium heat.
  10. Crack the eggs into the holes and season with salt and pepper.
  11. Once the egg starts to set, flip over and continue cooking the other side until set.
  12. Serve eggs with cheese sauce.
