Ingredients:

Directions:

  1. Soak Beans overnight. Rinse and drain well.
  2. Place beans in a large saucepan, cover with water and bring to a boil.
  3. Cook for 10 minutes, rinse and drain again..
  4. Return beans to pan and cover with water by 1 inch.
  5. Stir in the tomatoes with their juice, add garlic, bay leaves, black pepper and olive oil.
  6. Simmer for 11/2 to 2 hours or until beans are tender; add more water if necessary
  7. Remove the bay leaves.
  8. Puree about 1/2 of the bean mixture in a food processor.
  9. Stir back into pan with the bean mixture and add the 3 1/2 c. of water.
  10. Add salt and the pasta.
  11. Stir well and cook until the pasta is just done.
  12. Check instructions on box to determine the correct time.
  13. Stir in parsley.
  14. Allow to stand for 10 minutes before serving.
  15. Pass the grated Parmesan and the bottle of olive oil.
