Orange Whipped Sweet Potatoes

Ingredients:

  • 1/4 cup packed brown sugar
  • 2 tbsp butter
  • 1/4 tsp salt
  • 1/4 tsp nutmeg
  • 1/4 tsp ginger

Directions:

  1. Place sweet potatoes and 2 1/3 cups of orange juice in a large saucepan or dutch oven.
  2. Cover and bring to a boil.
  3. Boil for 35-45 minutes or just until potatoes are tender.
  4. Drain and place in a large mixing bowl.
  5. Mash potatoes with the brown sugar, butter, salt, nutmeg, ginger and remaining orange juice.
