Orange Banana Nut Bread

Ingredients:

  • 1 1/2 cups sugar
  • 2 eggs
  • 3 medium ripe bananas, mashed (about 1-1/4 cups)
  • 3/4 cup orange juice
  • 3 cups flour
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt

Directions:

  1. In a mixing bowl, combine the sugar, oil and eggs; mix well.
  2. Stir in bananas and orange juice.
  3. Combine the dry ingredients; add to banana mixture, beating just until moistened.
  4. Stir in walnuts.
  5. Pour into two greased 8-in. x 4-in. x 2-in. loaf pans.
  6. Bake at 325° for 50-60 minutes or until a toothpick inserted near the center comes out clean.
  7. Cool for 10 minutes; remove from pans to a wire rack to cool completely.
