Ingredients:

Directions:

  1. Preheat oven to 375
  2. Remove thyme from the stems
  3. Slice onions into rings (or half rings)
  4. Fry bacon in a separate frying pan, then remove the bacon bits and set aside on a paper towel to drain grease off.
  5. Melt butter in a large saucepan, add onions, bacon, and thyme, stir over medium heat (less sometimes to avoid burning) until the onions have caramelized into a nice golden brown (20 min)
  6. Remove from heat and allow to cool somewhat before adding salt and pepper and Greek yogurt, then stir lightly to blend
  7. Unroll your pie crust onto your pie plate
  8. Spread filling into pie crust evenly.
  9. Turn the long edges of the pie crust inward, on top of the outer edges of the filling forming an open pie
  10. In a small bowl, whisk the milk and egg, and brush over the edges of the tart
  11. Place the tart on the lowest level of the oven for 40-50 min (until golden)
  12. Take it out of the oven and sprinkle with some fresh thyme and a tbsp of Feta.
  13. Let cool for 15 min before serving. Serve with some cool Greek yogurt.
