Cheese and Onion Tart

Ingredients:

  • 1 1/3 cups all-purpose flour
  • 1/2 tsp salt
  • 2 tbsp cold crisco, cut into bits
  • 1 large onion, sliced thin
  • 2 tbsp butter
  • 3/4 cup firmly packed grated cheddar cheese
  • 1/4 tsp salt
  • 1/4 tsp pepper

Directions:

  1. For crust: Preheat oven to 400F.
  2. Combine flour and salt and cut in butter and Crisco until mixture resembles coarse meal.
  3. Add 3 tblsps ice water and combine until it forms a ball.
  4. Flatten into a 6 inch disk and chill it, wrapped in plastic wrap, for 1 hour.
  5. Roll out to 1/8 inch thick on lightly-floured surface and fit into a 9 inch tart pan.
  6. Trim edge and prick all over with a fork.
  7. Bake in middle of oven for 10 minutes.
  8. Let cool.
  9. Maintain oven temperature.
  10. For filling: Cook onion in butter over moderately-low heat until softened.
  11. Mash blue cheese with half and half and stir in eggs, Cheddar, onion and salt and pepper to taste.
  12. Pour into shell and bake for 10 minutes.
  13. Reduce oven temperature to 350F and bake 25 minutes longer.
