Ingredients:

  • 3 -4 plum tomatoes, diced
  • 1 (5 3/4 oz) jar pimento stuffed olives, chopped (i also save the juice and add to taste)
  • 1/2 medium onion, diced
  • 2 tbsp lime juice
  • 1/2 tsp pepper
  • 1/2 tsp ground cumin
  • cilantro (optional, not part of the original recipe but i love cilantro!) (optional)

Directions:

  1. Preparation:.
  2. Combine all ingredients.
  3. Yield.
  4. Makes 2 cups.
  5. Serve with tortilla chips.
