  1. Heat olive oil in a large skillet.
  2. Add zucchini and onion and saute 5 minutes.
  3. Add tomatoes and seasonings.
  4. Cover and simmer on low for 5 minutes.
  5. Sprinkle with cheese, cover and cook til cheese is melted.
